Chardonnay is the heart of their vineyards.\n\nThis vintage Blanc de Blancs is made entirely from Chardonnay from the estate's oldest vines, on two of the best parcels in Cramant: the lieux-dits Le Bateau and Les Terres de Buisson. It is fermented in stainless steel and goes through malolactic fermentation to soften the austerity Blanc de Blancs can show when young. The 2014 then spent six and a half years on its lees before disgorgement in December 2021, with a low dosage of 5 g\/L. Expect a very fine mousse, chalky minerality and citrus, finishing long with real presence.
