It is naturally fermented and made in a bright, taut style. Critics describe peach and lemon fruit with green apple, preserved citrus, white flowers and a hint of flint, carried by plenty of structure, juicy acidity and a saline, mineral finish. Bone dry and very food friendly: try it with oysters, grilled fish, Thai salads or pork schnitzel.
