Brothers Claude and Herve took over in 1995 and moved the family from selling to merchants to bottling their own wines.\n\nTheir Bourgogne Pinot Noir comes from vines partly in Santenay, below the hill of Maranges, and partly near Chassagne-Montrachet, on clay, limestone and loam. The vines are ploughed, the grapes picked by hand and never crushed, and about 30 per cent of the bunches are kept whole for fermentation with indigenous yeasts and gentle punching down. Most of the wine then matures in Burgundian oak barrels, 15 to 20 per cent new, with the rest in vat.
