The grapes are whole bunch pressed and fermented with wild yeasts in temperature controlled stainless steel, then the wine rests on fine lees before bottling. Expect fresh pear and white pepper on the nose with savoury, stony notes, then a light to medium bodied, linear palate that is crisp, dry and grippy, finishing long and saline. A versatile white for schnitzel, salads, sushi or green vegetables.
