Fresh, fun and surprisingly moreish, the nose is all crisp orchard fruit, sweet citrus, and honeysuckle florals, while the palate—with a soft, extremely effervescent mousse, aided by six months on lees—balances a taut, lingering acidity and tart, apple-y fruit notes against a ripe hint of nashi pear sweetness. A great starter (or finisher). One bottle may not be enough.
