Racked to old French oak puncheons (500 litres) for fermentation. Maturation on lees for 4 months before bottling. Tasting Very open nose with jasmine, orange blossom a touch exotic. Flavours are very concentrated with lime zest, red apple and preserved lemon. Great intensity, drive through the palate with a slinky acid profile.

Faint gas – less rich but still supple, involving, layered wine – with plenty of energy. Holding more weight of finishing flavour and for longer too.

A slight decrease in the new oak used for Lady A continues to bear fruit, giving a warm vintage full opportunity to glow: a tropical, grassy nose—with hints of some creamy, bread-y lees character—still holds enough oak (cedar, vanilla) to balance well. The palate, as usual, is lush, broad and beautifully textured, with a bit of smoky, mid-palate flint and good acidity drawing into a long, baked-pineapple finish. Complex, ripe, and intense. Just how Lady A should be.

Picked early to preserve natural acidity and cold fermented in stainless steel using specially selected yeasts. Crisp grapefruit, sherbet and lifted lemon/lime flavours on the palate with a lingering finish that is zesty and dry.
Moondarra Conception Bianco 2021 $37.75
Ultimately a blend of Picolit, Mendoza clone Chardonnay, and Ribolla Giallo blended with Picolit seedlings which have been crossed with Chardonnay and Ribolla. There’s also a little Pinot Bianco, Pinot Grigio and Friulano to add to this fruit salad. Hand picked fruit is crushed and fermented on skins without inoculation prior to maceration on skins for about a month after fermentation is complete. Sulphur is added at the conclusion of primary ferment to prohibit malolactic fermentation and preserve Granny Smith acidity. The wine is drained to old barriques for aging on lees. The dry grown fruit has extraordinary concentration of flavour which balances the tannin derived from the skins. The wine is bottled in Spring without fining or filtration. Conception Bianco is a profound and complex wine. It has intensity and persistence of flavour with delightful balance. There is an array of different flavours competing for attention, with different nuances revealing themselves at each taste.

100 % Chardonnay from vines ranging in age from 40 to 70 years. The fruit is whole-bunch pressed to stainless steel tanks for a cool fermentation with indigenous yeast.
