Martinique is a French island with the largest number of distilleries in the Eastern Caribbean. Both pot and column stills are used. As on other French islands such as Guadeloupe, both rhum agricole (made from sugar cane juice) and rhum industriel (made from molasses) are produced. These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies.
J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, where the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelรฉe. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, whereas Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

Rhum Agricole is both a distinctive production methodology and, more recently, an AOC (Appellation of Origin) protected product when produced according to strict criteria in the French protectorates of Martinique and Guadalupe. Primarily the distinction is the use of fresh cane juice instead of molasses or other refined sugar products and column distillation. The results are generally dryer and more aromatic Rums of elegance and refinement.
HSE's blanco is reputedly the only rhum/rum in the world which is progressively reduced from the 70% distillate down to 50% alcohol over a period of two years, partly via evaporation. Others typically reduce immediately after distillation, and then bottle shortly after or within a few months. The former technique allows the rhum to 'rest' and develop far longer than any other white rum, preserving the delicate aroma and mouth-feel.

A Martinique rhum vieuxย agricole from Distillerie Neisson. The label is hand painted by Tatankaย - a Martinique based craft company specialising in hand-painted art on a variety of media - who have been providing artwork for limited edition Neisson bottlings since 1996.
Jean and Adrien Neisson acquired their siteย in Le Carbet in 1922, building the distillery nine years later. It remains part of the family to this day, saved by Jeanโs daughter Claudine, who quit her job as a hospital physcian to run it after his death. Her son Gregory is now its master distiller. He produces its esteemed agricole rum on the distilleryโs single-column Savalle still, constructed back in 1938.

This distillery, built on the side of a volcano in Martinique, produces one of the highest quality of Rhum Agricole around, with this bottling being no exception. This fabulous spirit has been finished in Calvados casks, the second in this series of bottlings. The result of this finishing process is a rum of extraordinary complexity. Calvados is a type of French apple brandy, highly valued for its clarity of flavour, with the cask being sourced from the famous Lecompte brand.
