Tasting note

Fixin sits just south of Marsannay at the northern end of the Cote de Nuits, and Les Champstions is a village lieu-dit where Domaine Collotte farms half a hectare of Pinot Noir planted in the early 1980s. The Collotte family have grown grapes in Marsannay-la-Cote for four generations, and Philippe Collotte now runs the domaine with his daughter Isabelle. The grapes are fully destemmed and given a cool pre-fermentation soak of about a week, with punching down early in fermentation and gentler pumping over later. The wine then spends 12 months in barrel, a quarter of them new, and is bottled without filtration. Expect black cherry on the nose and a full-bodied, soil-driven palate with ripe, mellow tannins. The domaine sees about 15 years of ageing potential, and suggests beef bourguignon, carbonade flamande or a chocolate dessert.
