An aperitif-style sparkling, we pick our fruit—chardonnay particularly—early, looking for the lively acid and freshness that’ll stand up to more than four years on lees (and potentially many years in the cellar after that). A slow vintage meant acids and flavours were particularly intense, and it shows in the finished wine: the nose boasts green apple, gooseberry and dry lemon zest (with a hint of grassiness and lees-brioche), and the palate delivers racy, zingy acidity through a creamy, sherbety mousse that stays lively without lifting off. Fruit flavours are clean, delicate and well-integrated.
