Tasting note
A modern take on dry sake with a refreshing lemony character and a light, crisp finish. Made from 100% Hitogokochi rice polished to 59%, the citric acidity comes naturally from white koji, giving it a clean, lively quality reminiscent of a lemon sour. Notes of nashi pear, lemon myrtle and white pepper.
Pairs well with: Fresh seafood (oysters, calamari, fried fish), shellfish, light salads.
