Tasting note

The Collotte family have grown grapes in Marsannay-la-Cote, at the northern tip of the Cote de Nuits, for four generations. Philippe Collotte built up the domaine, and his daughter Isabelle joined him in 2013 after studying viticulture and oenology in Beaune; today they work around 17 hectares across Marsannay, Fixin, Gevrey-Chambertin and Chambolle-Musigny. Their Bourgogne Blanc is 100 per cent Chardonnay from a quarter of a hectare, mainly the Champ Forey parcel east of the village. The grapes are sorted, pressed slowly at low pressure and settled for 24 hours, and the wine then spends about ten months in stainless steel to keep its freshness. Expect pear and citrus aromas and a fresh, tender palate that slides into a salty finish. Drink within about three years; the domaine suggests sushi, spring rolls, a summer salad or simply an aperitif.
