Tasting note
La Fee Parisienne is a classic French verte absinthe, and the first absinthe legally distilled and bottled in France after the 1915 ban.
It was developed by George Rowley with Marie-Claude Delahaye, who founded and curates the Musee de l'Absinthe at Auvers-sur-Oise, and released in 2000. A verte takes its green colour from a second steeping of herbs after distillation rather than from added colouring, and that step is also what gives the style its depth. Bottled at 68% ABV, which is normal for the category and is why the drink is built with water rather than served neat.
Drip three to five parts iced water slowly over a sugar cube into the glass and watch it louche.
