Adelaide Hills. Hand-picked in Lenswood. North-east facing slope. 30% whole bunch. Wild fermented.  Matured in French oak for 9 months, 20% new. Pinot noir grapes were handpicked in the cool of the early morning and delivered directly to the winery. 30% whole bunch was put in the bottom of each open fermenter with the balance destemmed directly on top. The fruit was left to cold soak for 4 days after which wild ferment began spontaneously. The ferments were gently hand plunged twice daily so as to maintain as many whole berries as possible. Creating bright juicy fruit characters and firm yet silky tannin structure. The wine was matured in a mixture of new French oak Barrique and 2-4 year seasoned French oak. The barrels were tasted blind by the winemaking team selectin a portion of 20% new oak. The final blend was racked out of barrel, settled in tank and bottled without filtration or fining.  TASTING NOTES: Deep crimson with purple hues. Deep and brooding. Roasted beetroot, bramble fruit and cured meats. Fine yet firm tannins provide great length on the palate. Accompanied with black cherry, truffle and dried herbs. 13.3%

The Sirenya is a fresh, crisp and very lively Pinot Grigio making it a perfect summer wine. Hints of nashi pears and lifted floral aromatics, the palate of the Pinot Grigio is rather rich and textural but all the while remains minerally with a very clean, acidity and a long finish. Brilliant clarity and bright hues, with restrained floral aromatics of subtle pear and gentle spice. A true Pinot Grigio style.

From stack to stack this young man would swing from barrel to barrel with toes a curl and unrelenting furl. Lengths of carefully laid stillage ensures his safety as he endeavours to tend his precious store. The Tomfoolery ‘Monkey Business’ Cabernet Franc is sourced from a select premium vineyard on the borders of the two villages of Bethany and Vine Vale in the Barossa Valley. Grown by 6th generation grape growers, the Hage family, this flat site has varying depths of sand/sandy loams overlaying red clays and shale and situated at 316 metres above sea level. The fruit is handpicked at optimum ripeness and flavour profile, ensuring overall balance before being gently destemmed to keep as many whole berries as possible. It is then open-fermented for a minimum of five days with the juice being pumped over the skins twice daily to maximize oxygenation and purity of fermentation. Once the wine is dry it is then gently basket-pressed minimizing the extraction of harsh tannins. Matured for 18 months in seasoned French oak barriques. Colour: Medium purple with a bright rim. Aroma: Exotic, crunchy dried leaves, camphor chest, spice and a lift of fresh cut grasses. Palate: Juicy, ripe dark berries and fruitcake with a tangy acid spike, finishes long with fine but firm tannins and ethereal varietal flavour.

Less is more. Less fertilizers, less pesticides and less intervention. Vegan friendly. From an 80yo vineyard in Nurioopta, hand picked and naturally fermented for 12-14 days in an open fermenter. Basket pressed to seasoned oak for 12 months before bottling without fining or filtration. Color: Medium to deep ruby with garnet hues. Nose: A complex nose of red fruits, spices, and earth. There are hints of raspberry, strawberry, plum, black pepper, and cedar. There is also a touch of sweetness on the nose, from the ripe fruit. Palate: The wine is medium-bodied with a rich, velvety texture. The flavors of red fruits, spices, and earth are well-balanced by the oaky notes. There is also a touch of sweetness on the finish. The wine has good acidity, which helps to balance the sweetness and the tannins. Overall: This is a complex and elegant wine that is well-structured and balanced. It would be a great pairing with grilled meats, game, or hearty pasta dishes. Other notes: The wine was bottled unfiltered, which gives it a slightly hazy appearance. It has a medium-plus acidity and a long, lingering finish.

He was a snub-nosed, flat-browed, common-faced boy enough; and as dirty a juvenile as one would wish to see; but he had about him all the airs and manners of a man, void of taking responsibility or consequences of his mis-doing. The master of his surroundings as Shiraz is the master of ours.  The Tomfoolery ‘Artful Dodger’ Shiraz is sourced from a premium 80 year old vineyard in the sub-region of Seppeltsfield in Barossa Valley. Grown by 6th generation grape growers the Mattschoss family, this flat site is predominately alluvial loam and red clay over lime and iron stone and situated at 255 metres above sea level. The fruit is handpicked at optimum ripeness and flavour profile ensuring overall balance before being gently destemmed to keep as many whole berries as possible and then open fermented for a minimum of five days with the juice being pumped over the skins twice daily to maximize oxygenation and purity of fermentation. Once the wine is dry it is then gently basket pressed, minimizing the extraction of harsh extractive tannins. Matured for 24 months in seasoned French oak barriques. Colour: A core of ruby maturing to brick. Aroma: Old vine influence shows with satsuma plum and blueberry perfume, wisps of smoke.  Palate: The palate is full bodied yet elegant, with rich with bramble flavours balanced and sweet spice balanced with refreshing acidity. Soft tannins structure the long, slightly toasty finish.

A single block of old vine chardonnay located in a very cool location at West Cape Howe’s ‘Langton Vineyard’ was earmarked as the fruit source to make the base wine for the Blanc de Blancs. Picked early with high natural acidity, the base wine was fermented dry in stainless steel, fined and dispatched to Yalumba in South Australia for its secondary fermentation. The result is pure, light and very clean. The Burlesque Blanc de Blancs is pale straw in colour with a bright green hue and fine mousse. It exhibits clean aromas of fresh and preserved citrus. A surprisingly textural wine, it has a fine persistent bead and a creamy mouthfeel. Citrus flavours dominate the palate with a refreshingly dry finish. This wine is a perfect aperitif style, or can be enjoyed glass after glass...!

Winemaking Notes Fruit was hand picked over the space of 10 days. Whole bunch pressed at cool temperatures to tank and the juice was cold settled. Racked to old French oak puncheons (500 litres) for fermentation. Maturation on lees for 4 months before bottling.   Tasting Very open nose with jasmine, orange blossom a touch exotic. Flavours are very concentrated with lime zest, red apple and preserved lemon. Great intensity, drive through the palate with a slinky acid profile.

The Alejandro Vermentino is one wine, but two picks of fruit. The earlier pick was leaner and lighter on the palate but intensely freshly shucked oyster shell with lemon and pepper. The latter pick was rich and oily with salty characters, consistent with rich styles. The resultant wine is full of Vermentino aroma, a medium to full bodied palate, fresh but rich.

Our Wrattonbully Tempranillo has all the hall marks of this classic Spanish variety with dark Mocca and coffee bean characteristics blending nicely with regional herb notes. Dried herbs, cooked spices with hints of plum on the nose; Spicy fruit coffee bean, cocoa with hints of dark bitter chocolate, supple tannins are a hallmark of the variety. Being a cool climate, Wrattonbully reds see a regional eucalypt tinge as well.
