Les Chรขtillons is the most calcareous of Pierrickโs eightย Villagesย sites. The parcel was planted in 1972-73 and makes for an elegant, long, especially mineral wine and for that reason he bottles it separately. The domain farms 1.1 ha in this subsection of Fourchaume which is located towards the northern part of Fourchaume, a top Premier Cru vineyard noted for growing on similar contours as the Grand Crus above the right bank of the Serein. Pierrick's vines average 25 years with some up to 35 years old. Vinified with indigenous yeast with a very long slow alcoholic fermentation of 2-3 months. The wine is aged in stainless steel for 60% and in aged barrels for 40% with bottling in spring for a total elevage of 18 months giving a wine of excellent complexity and depth.

The domain has nearly 12ha of Petit Chablis, classified as such because the limestone tends to be the younger Portlandian rather than the older Kimmeridgian, and as such typically occupies higher sites (Portlandian overlies Kimmeridgian) and has less clay. Pierrick is convinced that his largest parcel of Petit really ought to be classed as Chablis; it makes wine like Chablis and indeed is surrounded by AOC Chablis vines.

He has eight parcels ranked Chablis, and the average age of the vines is 30 years.
โThe 2022 Chablis Village has a light, slightly chalky bouquet that opens nicely with aeration. Very controlled. The palate is well balanced, with a touch of reduction on the entry and fine acidity with hints of fresh mango and Clementine towards the finish. WINEMAKING: Sauvignon blanc grapes were harvested in the cool of night and delivered directly to the winery. The sauvignon blanc grapes were immediately crushed, destemmed and pressed to stainless steel tanks to retain freshness. After ferment the wine was left on fine lees for 3 months to build texture then racked.
TASTING NOTES: Brilliant platinum with green hues.Kaffir lime, green apple skin, gooseberry, nettle leaf and lemon thyme. Clean, crisp and fresh. Finger lime, lemongrass and guava. A long textural and mineral finish.

Ripened for an extended period on the upper Tamar River's northern slopes, this is an unmistakable Riesling with aromas of citrus, spice and oyster. Vinification using no SO2 in stainless steel tank for 75% and 25% in ceramic eggs with indigenous yeast and no malolactic. Bottled in March 2023 this shows excellent freshness and precision in a pure fruit-forward expression of chenin blanc in its most pure state. Very attractive and approachable right away. Un-fined, but filtered at bottling.

The Gewรผrztraminer from Cantina Tramin comes into the glass with a powerful straw yellow colour, a result of the reddish colored berries of the Gewรผrztraminer.ย This white wine from South Tyrol has an incomparable spectrum of aromas.ย Aromas of lychee, cloves, cinnamon and nutmeg, as well as tropical fruits fill the nose.ย On the palate, the South Tyrolean Gewรผrztraminer from Cantine Terlan is wonderfully opulent, balanced and beautifully dry.ย Despite its fullness, it dances nimbly over the tongue and knows how to present its aromatic complexity in an excellent way. The grapes for the Tramin Gewรผrztraminer grow on slopes between 300-450 meters on limestone, loamy to gravelly loamy soil.ย After the hand picking, the grapes are gently pressed.ย Fermentation takes place in small stainless steel tanks at 21ยฐC.ย During the subsequent expansion, the biological acid conversion is specifically avoided so that this Traminer retains as much fruit acid as possible.

2022 Studebaker Bianco Pinot Grigio, Friulano, Ribolla Gialla 750mlWe crushed fruit rather than press off skins. Some juice is left to ferment to dryness on skins, some partially fermented on skins and some just left for a few hoursโ pre-ferment.The portion of juice with skins is fermented in small, open bins and the cap plunged occasionally to keep wet and avoid volatility. The wine is drained to old oak with the yeast lees to integrate the sourdough flavours from the autolysis of the lees before bottling in Spring without fining or filtration. About a third of the juice is fermented in small, old oak without skin contact. We add sulphur after primary fermentation to preserve freshness.The overt green-melon โfruitinessโ is a pleasant surprise. Texturally itโs a joy. Leaving the wine unfiltered retains viscosity as well as almond blossom aromatics. The โphenolicโ, skinsy crunch (which comes from the fermentation on skins) acts as a kind of picture frame around the wine defining the honeydew and pear flavours complemented by ginger spice confined within these borders.

โOne only needs to stand at the top of this Climat of Chablis Premier Cru to appreciate the view and understand the origin of its name. It is only from inside the valley that Les Beauregard shows itself, on the left bank. From the first glance, the way its slope directly faces the sun is quite impressive. Despite this rather southern exposure, Les Beauregards remains a cool Climat due to its topography and its location at the bottom of the valley. The clay soils are shallow and the limestone marl never far away. Its stony and well-draining soil facilitates the circulation of water. This season we again handpicked all fruit due to the inability to book a machine harvester.ย After crushing we were able to juice soak the skins for 6 hours prior to pressing.ย Cold settled juice was then split into two tanks where fermentation was performed using two different inoculated yeasts, both selected for their ability to enhance muscat and monoterpene aromas and flavours. ย Having had very low yields we decided to blend the 2023 Gewurztraminer into the Chardonnay Musque to help with volumes.ย This blend was racked early, again to ensure freshness of aromas.ย Rather than heavily fining and risking losing varietal character we blended in a very small amount of the unfermented juice.ย This small amount of sugar added mid-palate weight and mouthfeel and avoided the need to heavily fine the wine.ย The final blend was then stabilised and filtered before bottling July 10, 2023.
