2022 Studebaker Bianco Pinot Grigio, Friulano, Ribolla Gialla 750mlWe crushed fruit rather than press off skins. Some juice is left to ferment to dryness on skins, some partially fermented on skins and some just left for a few hoursโ pre-ferment.The portion of juice with skins is fermented in small, open bins and the cap plunged occasionally to keep wet and avoid volatility. The wine is drained to old oak with the yeast lees to integrate the sourdough flavours from the autolysis of the lees before bottling in Spring without fining or filtration. About a third of the juice is fermented in small, old oak without skin contact. We add sulphur after primary fermentation to preserve freshness.The overt green-melon โfruitinessโ is a pleasant surprise. Texturally itโs a joy. Leaving the wine unfiltered retains viscosity as well as almond blossom aromatics. The โphenolicโ, skinsy crunch (which comes from the fermentation on skins) acts as a kind of picture frame around the wine defining the honeydew and pear flavours complemented by ginger spice confined within these borders.

Ultimately a blend of Picolit, Mendoza clone Chardonnay, and Ribolla Giallo blended with Picolit seedlings which have been crossed with Chardonnay and Ribolla. Thereโs also a little Pinot Bianco, Pinot Grigio and Friulano to add to this fruit salad.
Hand picked fruit is crushed and fermented on skins without inoculation prior to maceration on skins for about a month after fermentation is complete. Sulphur is added at the conclusion of primary ferment to prohibit malolactic fermentation and preserve Granny Smith acidity. The wine is drained to old barriques for aging on lees. The dry grown fruit has extraordinary concentration of flavour which balances the tannin derived from the skins. The wine is bottled in Spring without fining or filtration.

โOne only needs to stand at the top of this Climat of Chablis Premier Cru to appreciate the view and understand the origin of its name. It is only from inside the valley that Les Beauregard shows itself, on the left bank. From the first glance, the way its slope directly faces the sun is quite impressive. Despite this rather southern exposure, Les Beauregards remains a cool Climat due to its topography and its location at the bottom of the valley. The clay soils are shallow and the limestone marl never far away. Its stony and well-draining soil facilitates the circulation of water. This season we again handpicked all fruit due to the inability to book a machine harvester.ย After crushing we were able to juice soak the skins for 6 hours prior to pressing.ย Cold settled juice was then split into two tanks where fermentation was performed using two different inoculated yeasts, both selected for their ability to enhance muscat and monoterpene aromas and flavours. ย Having had very low yields we decided to blend the 2023 Gewurztraminer into the Chardonnay Musque to help with volumes.ย This blend was racked early, again to ensure freshness of aromas.ย Rather than heavily fining and risking losing varietal character we blended in a very small amount of the unfermented juice.ย This small amount of sugar added mid-palate weight and mouthfeel and avoided the need to heavily fine the wine.ย The final blend was then stabilised and filtered before bottling July 10, 2023.

The Pichot family is one of the oldest in Vouvray with origins as restaurateurs going back to 1739 later followed by the purchase of the superb Coteau de la Biche vineyards in 1770 establishing them as growers to help supply the restaurant. Their vineyard holdings are mostly located all at the top of the village with the largest holding which makes up their classic Coteau de la Biche in the prime Vallee de Nouys which is perfectly sited for making drier styles of wine and faces south-east. The Pichot family also own most of the โpremiere coteauโ site of Le Marigny located just above the village opposite Clos du Bourg. These are quite simply regarded as being amongst the very best vineyard sites of the appellation.
Vinification in stainless steel tanks at low temperature with a small amount in used oak barrels for the still wines, 10% aged barrels for sec and 20% for demi-sec and more for sweet wines. Wine aged on fine lees for 6 months before bottling using tangential filtration.
This wine has been selected as being amongst the very best of Vouvary for its typical character, rich concentration and fresh acidity. Whilst this wine an be enjoyed young for its freshness, it will also age superbly for many years with careful cellaring.ย

Our Eden Valley vineyard lies just south of the small township of Craneford, at an elevation of 420m. The soil and climate varies quite considerably to that of the Barossa Valley floor. It is generally wetter and cooler in the Eden Valley with skeletal soils. Aspect also varies significantly, with rolling hills and valleys providing much site variation. The Craneford vineyard is tended to by our own viticulturists, Peter Wild and Conrad Pohlinger, who ensure utmost care is taken in every step of the vine cycle.
Winemakers Comments
Ample winter rainfall and a mild spring allowed for a great start to the season, with a decent canopy developing which provided adequate protection for, and capacity to, ripen the fruit. As the season progressed, short frequent irrigations ensured the lean soils retained enough moisture. The ripening seasoned allowed for steady ripening along with the retention of acidity that is so crucial to Chardonnay. The fruit was crushed and pressed off skins immediately on arrival to the winery. The juice was cold settled, before being racked, with a portion of the lighter fluffier solids taken across with the clear juice, before being separated into two stainless steel fermenters. Each fermenter was then inoculated with a different yeast. Once fermenting the two parcels were then transferred into a combination of new and used French oak. Partial malolactic fermentation, coupled with regular battonage, helped build the delicious creamy texture in this wine. - Jules Ashmead and Brock Harrison
