Definition: The Don Zoilo range includes 5 wine varieties of extraordinary quality, with the designation of origin Jerez-Xérèz-Sherry and Manzanilla de Sanlúcar. Oloroso, Palo Cortado, and Pedro Ximénez are more than 15 years old and certified by the Sherry Wine Regulatory Board (Consejo Regulador).
Type of grape: Palomino.
Vineyards: Jerez Superior. Pago Añina y Carrascal
Tasting notes: Wine the colour of old gold. Very sharp, intense aroma, complex with hints of dried fruits and hazelnut. Mouthfeel is dry, silky, has very balanced acidity, is full-bodied, has a very elegant character, has a persistent mouthfeel, and has tremendously expressive retronasal olfaction.
Suggestions for consumption : Exceptional wine, ideal for sipping slowly (“meditation wine”). Drink with dried fruits, mature cheeses, and at the table, consommés, stews, and gelatinous meats (oxtail, pork cheeks, etc.).
