Tasting note
A seaweed liqueur is not something you come across every day. Gabriel Boudier's Nori began as the winning entry in the Dijon house's Wizard Competition 2020/2021, a contest that challenges bartenders to invent the most original liqueurs of the year. Its creator is Matthew Cusworth of Hoot the Redeemer in Edinburgh.
It is made from nori and dulse seaweed, dried first to preserve their flavour and then macerated to draw it out. The infusion is filtered to remove any seaweed, and a very small amount of sugar is dissolved into it cold, just enough to balance the savoury character.
Aroma. Intense and distinctive, like the ocean, with fresh seaweed and sea breeze.
Palate. The salty umami of nori, recalling sushi and seafood.
Using it. Boudier presents it as an ingredient for creative cocktails, where it adds a saline, umami edge, and the house blog singles out martinis. It can also bring a marine touch in the kitchen to marinades, sauces and even desserts. See more in our liqueurs collection.

Free delivery on orders over $499, anywhere in Australia except the Northern Territory, which we do not deliver to. Standard rates apply below that and are calculated at checkout.
Once your order is confirmed you will receive a shipping notification with a tracking reference. Larger or mixed orders sometimes travel as more than one parcel, and you will get tracking for each.
Alcohol can only be delivered to a person aged 18 or over. The courier may ask for photo ID and will not leave your order unattended. We do not offer authority to leave on alcohol orders.
We do not deliver to PO boxes or parcel lockers.
