Tasting note
Seaweed in a liqueur sounds unlikely until you taste it in a drink. Gabriel Boudier of Dijon makes this one from nori and dulse seaweeds, which are dried to hold their flavour, macerated, then filtered clear of any residue. Sugar is dissolved cold straight into the infusion and kept to a small amount, just enough to balance.
The recipe is the work of Matthew Cusworth of Hoot the Redeemer in Edinburgh, whose creation won Boudier's bartender Wizard Competition in 2020/2021.
Aroma. Intense and marine, with fresh seaweed and sea breeze.
Palate. A salty umami note typical of nori, with flavours that recall sushi and seafood.
Using it. Boudier designed it for creative cocktails where a saline, savoury edge is wanted, and suggests it in the kitchen too, in marinades, sauces and even desserts. Browse more in our liqueur collection.

Free delivery on orders over $499, anywhere in Australia except the Northern Territory, which we do not deliver to. Standard rates apply below that and are calculated at checkout.
Once your order is confirmed you will receive a shipping notification with a tracking reference. Larger or mixed orders sometimes travel as more than one parcel, and you will get tracking for each.
Alcohol can only be delivered to a person aged 18 or over. The courier may ask for photo ID and will not leave your order unattended. We do not offer authority to leave on alcohol orders.
We do not deliver to PO boxes or parcel lockers.
