Tasting note

Pierrick Laroche farms the family vineyards of Domaine des Hates around Maligny, in the north-west of the Chablis appellation, and made his first vintage in 2010. Les Chatillons is his oldest parcel, planted in the early 1970s on the Kimmeridgian limestone plateau above the premier cru Fourchaume L'Homme Mort, and it is bottled on its own rather than disappearing into his village Chablis. A small share of the wine is raised in used oak, including larger demi-muids, with the rest in stainless steel, and it goes through full malolactic fermentation. That gives a little more weight than the standard Chablis, but the chalky site still leads: precise and long, with a saline, clean finish that makes a classic match for oysters. Also good with grilled white fish, roast chicken or a hard goat's cheese.
