Tasting note

A dessert Riesling from the Pooley family's Butchers Hill vineyard at Richmond, beside the cellar door in Tasmania's Coal River Valley, and the fourth sweet Riesling made from the site. The canes were cut in late March, leaving the bunches to shrivel and concentrate on the vine until they were hand picked on 16 May at 16.5 Baume. The fruit was whole-bunch pressed, the juice returned to the skins for 24 hours and pressed again, three press cycles in all, then rested five months on lees in stainless steel. With 142 g/L of residual sugar balanced by fresh acidity, it shows jasmine, honeysuckle and citrus blossom over caramelised apricot and lime peel, then a lively palate of lime, orange pith and almond. Serve chilled with apricot or citrus tarts, or blue cheese.
