This XO Cognac over 25 years old comes from our property of Grande Champagne First Cru and was aged in the dampness of our cellars nearby the Charente River. Amber coloured and maintaining a perfect balance between the finesse of the alcohol, the fruity aromas and the wood taste from the oak cask. Here is an ideal compromise expressed through floral and spicy hints with a touch of strength, thus creating a very subtle harmony. Grape variety Ugni Blanc: green grapes bringing structure and acidity, with naturally preserving qualities. These vineyards about 25-years old are situated around Gondeville. The clay and chalk soil is another advantage for the quality of these vines and the COGNAC to come. Ingredients: First Cru Cognac, distilled water, possible traces of caramel, sugar and wood taste. This rare โ€œBorderies 33 yearsโ€ is actually much older than its guaranteed minimum age.ย This cognac comes from a smallholding in the Borderies, which was sold by its owner in 1980. This holding tfore no longer exists, and this was the last testimony. This cognac comes from a difficult, clayey and siliceous terroir, lands that the winegrowers qualify as โ€œย ย friendshipย ย โ€.ย The harvest was done by hand, and this cognac was distilled in a small 3 hectoliters still, heated with wood and charcoal.ย Aged on clay, in a cellar located below the road, only 188 litres remained in the small 350-litre barrel. Amber colour. On the nose, a lovely expression of candied fruit, ginger and pastries, like a morning in a bakery.ย Some notes of undergrowth, refreshed by scents of white flowers, iris, daffodils, but also violet.ย On the palate, the attack is soft, very greedy, with a buttery side.ย The violet emerges, quickly complemented by spices, Sichuan pepper, candied ginger, then light notes of mushroom.ย Beautiful elegance, extended by an exceptional length for a cognac grading only 41 ยฐ 2.

This cognac comes from the family property of the cognac merchant who sold it to us. It remained in the same family for 60 years, stored at its original location, a huge paved cellar, until we transferred it to government-controlled cellars in 1999. The owner's chateau was occupied by the German Wehrmacht and the archives dispersed at the end of the war, making it impossible to prove it dates back to before 1944. The end of the war brought with it widespread pillaging, both by occupying forces and local inhabitants This cognac's lightness and delicate aromas make it atypical for its cru. It, therefore, most certainly comes from a limestone soil. Surprising vitality yet softness and roundness, and an unforgettable prune palate. This is proof that even smaller crus can produce wonders! Deep amber colour. This vintage Cognac comes from a small fruit farm situated in the area of Saintes, a few kilometers from the eponym city. Starting in 1971 with 10 hectares of apple tree, this farm owns now about 100 hectares of fruit trees, and only a few of hectares of vine. This hardy terroir, made of clay and loam, is not claiming to be the best for vine growing. However, a good culture of the vine, a fine distillation, and quality aging, make this cognac powerful and balanced, more and more sought after by the amateurs. Young gold robe. In the nose, aromas of rumbaba, currants, and orange peel. Powerful, we can feel kind of a heaviness (Clay). One has to let the glass at the air, to experience more light and green notes like grape stalk, clove. Breath of salty air.In the mouth we find the nose, with a certain power at the beginning. We acquired this cognac from a merchant in 1999. The archives mention it under the name โ€œPetite Champagne Parorโ€ and we were able to follow its history for a few years from 1918, when World War I ended. Then the cognac disappears completely during the years of the German occupation. In 1946 however, it re-emerges and we can follow its history again. But, it disappears soon afterwards in the archives until the 1970s when it reappears againโ€ฆ The cognac is mentioned in the archive from this date on under its original denomination. We bought all the stock, 285 litres. It is one of our most precious treasures and for this reason, only available in very small quantities.

This very old cognac comes from a family of notaries whoโ€™ve lived since 1794 near the small village of Saint-Sulpice de Cognac, in a beautiful 18th century home. T are traces of the family dating back to the French Revolution, when the Mayor of the village left an estate to his family. The property had vineyards planted on the most exceptional hillsides of the Borderies region. It is one of his descendants who produced this beautiful cognac, on the land that once belonged to his father, to his grandfather, and even to his great grandfatherโ€ฆ And Guilhem bought this single cask from his great-great-grandson. These very ancient cognacs, of which only a few hectolitres are left, have been passed on for four generations, inherited each time by someone in the same family. The estate stopped producing cognac in 1981. It is at this date that the distillery closed and that the vines were sold to big neighbouring estates. The family heirs have accepted this and today take the greatest care in preserving this exceptional heritage which is sleeping in the cellars built centuries ago by their ancestors. The colour is very amber. On the first nose, this cognac reveals discreet notes of violet (violet sweetsโ€ฆ), of hyacinth and of tuber. These fragile and delicate notes are quickly covered by more powerful, almost spicy notes of dried flowers, leather, with pronounced rancio. On the palate, the attack is progressive; it is a testament to the great age of this cognac. The aromas of dried flowers, of old leather book covers and of spices immediately express themselves. The mouth is quickly seized by the spices and rancio, a token in itself of the authenticity of an old cognac. The finish is long, marked by a structured rancio along with notes of dried oranges and liquorice. An approachable cognac, despite being very โ€œcompleteโ€.

This lot comes from the father of the winegrower who produces the Folle Blanche, in the region of St-Fort-Sur-Le-Nรฉ. This batch was distilled with wood and charcoal, in a 7-hectoliters still. Its rare taste qualities require me to offer it to you brut-de-tรปt, that is to say without any alcohol reduction. Very amber colour. The nose is marked by lively and frank notes of ripe plums, mirabelle plum, leather, and black pepper (Kappad). The whole is very harmonious, and from the nose, the invitation to taste is strong. On the palate, the attack is powerful and immediately complex. It's an explosion of spicy and virile notes: nutmeg, cloves, black pepper. Quite a woody cognac, which gives it a dense and rich texture, with a chewiness worthy of red wine. Nice balance, alcohol does not burn, controlled astringency. The finish is marked by very long notes of blackcurrant.

It was when the latter died that she learned that she was the owner of several Cognac barrels stored under State control. Very amber colour. Spicy nose, notes of cloves, peppers, liquorice, bourbon vanilla. The palate is creamy, with tenacious notes of cocoa and vanilla. The notes of tobacco and roasting become intense with the opening. The finish shows a "hidden and very sweet power", slight acidity (due to the wood) but no astringency.

This very rare Cognac comes from a joint possession which was established upon the death of the winegrower many years ago.ย This man, also a country broker, used to keep track of the oldest cognacs he sold.ย It was from his son that Jean bought this cognac, in 1999. Since then, this unique cask has remained stored in our cellars.ย Because of its high quality, it had been isolated without any particular purpose having been defined.ย It was only in 2017 that bottling was carried out for our collection. TASTING NOTES Very amber color.ย On the nose, this cognac affirms its great age with tertiary notes, spices, white pepper, autumn undergrowth, humus, and a pronounced rancio.ย Bearing, it also emerges a certain lightness of these aromas, thanks to notes of jasmine, tubers, candied fruit.ย On the palate, the attack is sweet, greedy, little tannic, with an elegant rancid flavor.ย The vintage, the Fins Bois, makes this fine cognac, not very powerful in amount, certainly, but very balanced, and accessible in the mouth.

This very rare cognac comes from a small farm located in a village close to Courbillac, Herpรจs. This producer works for other distilleries to supplement his income, and he is recognized as an expert of an ancient distillation practice called โ€œmรฉthode grasseโ€, which gives richness and density to the โ€œeau-de-vieโ€, increasing substantially the positive effects of ageing. We buy the entire harvest, entirely composed of the Folle. Blanche grape variety is then vinified and distilled on the estate, before starting its ageing process in our cellars. The Folle Blanche is a grape variety that originates from the region, long before the Phylloxera crisis. It has since become very rare (around 1% of vineyards in the region) because of its sensitivity to Botrytis. This cognac was slowly reduced after the distillation while in specific casks to fully reveal the beneficial effects of this ancient distillation method. Tasting Notes: On the nose, notes of ripe grapes, and apricot, old Sauternes. Cinnamon, candied fruits and pineapple roasted nose. Tender, tasty on the palate, itโ€™s possible to feel the greasy notes coming from this distillation process. A little compoteย side could be due to the fact that the percentage of โ€œsecondโ€ is important. Very smooth though, spicy finish; seems to be older than in reality. A nice Fins Bois, very rare.

This vintage Cognac comes from a fruit farm located in Saintonge.ย Having started in 1971 with 10 hectares of apple trees, this farm now has some 100 hectares of fruit trees and only a few hectares of vines.ย This rustic terroir, made up of clays and marls, is reputed not to be suitable for viticulture.ย However, good management of the vines, careful distillation and quality aging manage to give these Cognacs a distinctive, powerful and balanced character, more and more sought after by amateurs.ย Tasting Notes:ย Golden colour. On the nose, sweet aromas of rum baba, currants and orange peels.ย You have to let the glass air out to perceive more airy and vegetal notes, such as grapes and cloves.ย Beautiful puffs of salty air that make you salivate.
