The Jean Fillioux Nยฐ1 Cognac is an exceptional 60-year-old Grande Champagne delight. Only produced in very small volumes, itโ€™s fresh and fruity, and showcases the very best of why this growth region is rightly determined to be the โ€˜premier cruโ€™. Whilst it offers a powerful tasting experience, it does so in a rounded, smooth, and ultimately satisfying manner. A Cognac to be enjoyed in the traditional manner, perhaps sipped in the company of good friends or family, and with other connoisseurs who will also appreciate its delightful complexity. Definitely one for special occasions. Its beautiful amber dress is adorned with beautiful coppery shades. Then the nose opens on fruits, especially fresh apricot, spices, vanilla and licorice. The attack is wide. Alcohol is present but in terms of power, not aggression.

The new kid of the range has, like all the little ones, been the subject of special attention. I thought it would be interesting to age the last year of the century in a separate and unique cellar. The entire 1999 harvest has aged in the cellar of Villeneuve-Haut, slightly less humid than those of Montendres. It was bottled at the end of 2017. Aromatically, it is the bridge between the flower of Napoleon and the fruits of the old reserve (X.O.). The aroma of Napoleon's vine flower intensifies and becomes more captivating; the fruity side of the old reserve appears. This combination of aromas, as well as the aging in dryer cellars, give a higher liveliness and make it a more "intense" cognac. Its success with our amateur customers confirms us in the style of the house: single year and single vintage cognac.

?C?pages? translates from French as ?grape varieties?, and refers to the three different grape strains used in this Cognac bottling. These grapes are: Colombard, Folle Blanche and Ugni Blanc. Each grape provides something different: Colombard provides power and depth, Ugni Blanc gives structure and balance, and Folle Blanche lends high tones and finesse. Grosperrin are better known for bottling ultra specific, single varietal Cognacs, so this is an interesting step from the producer. Each of the grapes used to make this Cognac come from the premier cru of Grande Champagne. This Cognac contains a blend of several vintages, from 2011, 2012, 2013, and 2014. After distillation, the spirit was aged for a minimum of 4 years in French oak casks. The final product delivers notes of fresh bright grapes, apples, some acacia honey, dried flowers, peppery spice, vanilla, creamy butter, spiced oak, and toffee. Once again, Grosperrin have produced a VSOP that is a cut above other Cognacs in this age grade.

This very old cognac comes from the commune of Rรฉparsac, a commune located in the heart of Fins Bois. It was produced by a winegrower who was also a nurseryman, and who had developed activities complementary to his profession as a producer. Very old when I met him, this lot was the last he had. He had kept it as long as possible, in memory of his first harvest. Tasting Notes: The nose of fresh mushrooms, dried flowers, blackcurrant bud. We immediately guess that this cognac has aged in a wet cellar, due to the mushy notes that emerge from it. But despite this cellar side, the aromas are noble, this cognac is astonishing, we never tire of the nose. On the palate, the attack is soft, rich and creamy. The aromas on the nose are confirmed on the palate, blackcurrant, wet dog, complex finish, both vegetal and smoky at the same time. A very old Fins Bois, rare.

Subtil & So, the new VSOP Cognac Grande Champagne by Jean Fillioux. With the noble bottling, the house once again proves that the Grande Champagne, originally known for its old cognacs, can also produce excellent younger qualities. The proof: a coveted gold medal from the Spirits Selection by Concours Mondiale 2021 and a wonderfully harmonious profile of fruity freshness and warm spiciness. The 4 to 6-year-old VSOP comes from the picturesque La Pouyade winery, which has been family-owned since 1894 and is completely independent to this day. It is surrounded by 25 hectares of the finest white wine grapes. They thrive in the "Golden Triangle", the heart of Grande Champagne. They are cherished and loved in the fifth generation by Christophe Fillioux and his family, who are one with their vineyard. This exceptional batch is one of the very few in our collection to come from a distiller and wholesaler. The large well-known House, once owned by the Suntory group, for some unknown reason, relieved itself of aย  few casks of oldย  Cognac in aย  top-secret transaction that took place through a certified broker in 2019. This extremely rare lot of two casks is of undeniable interest, even though we cannot guarantee it has never been blended. Tasting Notes: Old gold hue. There is no mistaking the natural characteristics of Fin Bois on the nose: exotic fruit and lime blossom honey beautifully rounded off by very distinctive chalky notes. The montant is powerful; with the ethyl acetate contained the balsamic qualities of the rancio begin to come to the fore.ย  The mushroom, old-cellar maturation notes testify to the great age of this Cognac, which has not however lost its vivacity and freshness. On the palate, the attack is bold, oily and very well-balanced. The alcoholic strength is barely perceptible. Then the rancio releases its full potential,ย  contributing aย  certain purity to this Fins Bois. The finish is extremely long and rather dense. A superb Cognac that will delight enthusiasts of this cru.

This vintage Cognac comes from a family of public notaries who has been located close to the city of Cognac for many generations. This Petite Champagne was part of the inheritance of the father, who had bequeathed his stocks of Cognac to his wife and his son, who was public notary like him. The father has bought this batch on January 1974 to one of his clients, who was at the time the President of one of the most important Cognac Houses. Unfortunately, when the father passed away, his wife and his son were in disagreement and the succession was blocked until we propose a solution. This is a very โ€œsentimentalโ€ cognac, stored under State control since the 25th of January 1974, in a very humid cellar located on the bank of the Charente river in the city center of Cognac. This cellar is today the Cognac Museum. The harvest 1973 was abundant ( 62% compared to the harvest 1972 in Petite Champagne!) and was qualified of โ€œharvest of the centuryโ€ at the time. Warm gold colour, with amber lights. The nose is rich and unctuous; ripe fruits, dark-red plums, Mirabelle plums, spices (curcuma, cardamom, pepper) and sandalwood, cedar scents. Surrounding the fruits, the lovely old rancio nose that well-matured Cognac develops. The taste increase the fruity delicacies (plums again, dark chocolate with cinnamon) and the spicy side (tobacco, nutmeg). At the end, slightly bitter as coffee beans, complexity and elegancy of a controlled rancio.

This rare Cognac comes from the commune of Brousse, near Matha, from a small farm. The current producer, born in 1952, still has cognacs distilled by his father and grandfather. It was only in 1950 that the property was equipped with a traditional 16 hectoliters still (Marestรฉ), which then worked on wood (during the day, for the scrambles) and on charcoal (at night, for the good toast). ). Previously, as in most Charente estates, only a small boiler of 500 or 600 litres was used to distil the production of wines. This cognac is the result of the assembly of two batches, made on the advice of a great Cognac house, by the winegrower himself. The cognac was bottled in 2000. This very old Cognac was bought from the widow, almost a hundred years old, of a man who died several years ago. Since then, the Eaux-de-vie have belonged to the family, made up of his widow and several children. This family of winegrowers has been based in the village of Burie since 1930, in the very heart of the Borderies. It was on this date that the father of the deceased bought the property with his stocks. The property is now managed by his grandson, who operates around thirty hectares on two small properties, renowned for the high quality of their Eaux-de-vie. It is an extremely rare lot, which could have belonged to the range of Treasures, if it had not aged in such a dry cellar, which gave it great distinction and a lot of charm but maintained the degree at a still high level, reserving it for lovers of powerful spirits. It is presented with cask strength. Tasting Notes: Amber colour, old gold reflections. On the nose, a lot of elegance with spicy notes (turmeric, candied ginger), and an impressive freshness for such an old Cognac. The upright is straight and clean, yet rich and dense. The rancios are discreet and delicate. On the palate, the attack is oily, powerful without stinging or burning, and very straightforward. Candied fruit comes first, followed by candied ginger, all carried away by an elegant and remarkable rancio. The final never ends.
