It's really clean and refreshing but some yeasty / brioche notes bring a more serious side into play. The finish is long, dry and very satisfying.

The Metrat family home and winery are to be found in the midst of the very highly regarded sector of Fleurie called “La Roilette”. La Roilette lies towards the bottom of the slope close to the border of Moulin a Vent and here the soil has a base of clay underneath the decomposed pink granite that is so typical of this area. This makes for wines that have a little more depth and structure than most other Fleuries. ‘A good Fleurie is a wine of medium weight which has an ample flavour absolutely crammed full with this fruit and is overwhelmingly seductive. Some Fleuries can be delicious as early as the spring after the vintage. Others need keeping for another 6 months.’ Clive Coates MW. The Fleuries from the Metrat family fall into this latter category and these wines are now showing very well with the old vines cuvee having a little more dimension and finesse than the traditional cuvee. The winemaking by the Metrat family is traditional with fermentation in cement and no artificial yeasts used, crop levels are kept low and hand harvested. The wines show great purity of fruit with ample perfume and silky texture. The extraction of tannins is gentle and although these wines are generally drunk young these wines from the Metrat family can confidently be enjoyed over 5 or 10 years if you can manage to keep your hands off them! From vines planted after 1945 this cuvee consists of the ‘younger vines’ mostly 40-60 years old planted in the heart of this outstanding lieu-dit La Roilette. This is also vinified in large cement vats with very gentle vinification of gently submerging the cap of the ferments giving very fine tannins. Each year we taste the different cuvees with Bernard we agonise about which cuvee of La Roilette to buy and for the tiny difference in price we usually opt for the vieilles vignes cuvee although in warmer years it is often the classic La Roilette cuvee which shows best in the first few years. This cuvee always has excellent depth and character right after bottling so in 2019 we have selected this cuvee - so you don't need to wait to enjoy this cuvee right now.

70% tank fermented and 30% barrel aged. As the name suggests this cuvee is very floral with fine delicate aromas. Fine crisp and very classic there is plenty of fruit here, lemon, lime and grapefruit zest with a ripe juicy acidity, a strong complex terroir dimension is obvious, too, with its chalky, mineral touches. Purity and finesse abound in this absolutely classic Sancerre. ‘One of the Pinard family’s more widely available cuvées, this opens with a delightfully smoky, bright and fresh nose. A very polished start to the palate, with no oak character showing here, instead a seamless substance, underpinned by delicious acidity, bitter and charged, which cuts through the elegantly formed fruit of the palate very well. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4 months prior to bottling.

The fruit is fully hand harvested and sorted before 100% de-stemming with maceration on skins for 10 hours at 3°C before pressing. The wine is then fermented at low temperatures before the addition of grape spirit for a light fortification bringing the must to exactly 15%, retaining natural grape sugars which are kept as close to the lowest limit of 110 g/litre of sugar. The wine is then racked off and stabilized before being left on fine lees for a further 2 months prior to bottling. The Muscat from La Pigeade is characterized by its freshness and finesse and is to be found in many of the leading restaurants of the Rhone Valley. It is an ideal aperitif and also goes well with many desserts, especially ones with chocolate, or a fruit salad, or strawberries where some is also poured over the fruit. It is also a perfect companion for many blue cheeses.

The Pouilly-Fume Tradition has much less of the green flavors often connected with this appellation. Instead, it is rather floral, displays more yellow colored fruit aromas (also citrus), whereas the fascinating foundation is built up by crushed limestone rocks. On the palate this is an expressive and powerful, yet elegant and persistent Pouilly that is still young and should benefit from further bottle age. Beautifully balanced, though it does not lack a thrilling structure.
