Tasting note
This is the house classic of Distillerie La Salamandre at Sarlat, in the Périgord: an eau de vie of Ente plums, the south-west variety that also gives the famous prunes of Agen. The fruit arrives fully ripe from growers a few dozen kilometres from the distillery and ferments naturally, with no added sugar or flavouring.
Still and cask. Distillation is in copper stills, keeping just the heart of the run. The spirit then goes down to the cellars to rest for many years in old oak barrels, and it is the wood that gives it its amber colour and its roundness. It is bottled at 46%.
Tasting. Round and full of character: a lightly woody attack, then the subtle prune note that marks the house's old plum spirits.
Serving. After dinner, at room temperature (18 to 20°C), in a small tulip or eau de vie glass. Do not chill it, as cold closes up the wood and prune notes, and give it a few minutes in the glass to open. La Salamandre pairs it with a prune, a square of dark chocolate or a coffee. Once your order is confirmed you will receive a shipping notification with a tracking reference. Larger or mixed orders sometimes travel as more than one parcel, and you will get tracking for each.
Alcohol can only be delivered to a person aged 18 or over. The courier may ask for photo ID and will not leave your order unattended. We do not offer authority to leave on alcohol orders.
We do not deliver to PO boxes or parcel lockers.
