Tasting note
Victor Gontier is a Calvados producer at Saint-Georges-de-Rouelley in the Domfrontais, the pear country of southern Normandy, and this is a single vintage from 2005.
The appellation. Calvados Domfrontais must be distilled from ciders containing at least 30% perry pears, in a single continuous run through a column still, and then aged at least three years in oak before sale.
The style. That high share of pear alongside the apple gives softness, roundness and ripe fruit aromas, and Domfrontais quality is notably consistent. Older vintages tend to be more concentrated; this 2005 manages to taste mature and youthful at once.
