White Rum Guide: Styles, Strength and the Best Bottles to Mix


White rum is clear rum: either unaged spirit rested in steel, or rum aged in oak and then filtered to remove the colour. It can be light and mild or loaded with grassy cane and tropical fruit, and that difference is exactly what decides how good your Daiquiri or Mojito tastes.

What is white rum?

Rum is distilled from fermented sugar cane products. The European Union's spirit drinks regulation (EU 2019/787) is the clearest rulebook: rum must be made only from cane sugar molasses, cane syrup or fresh sugar cane juice, distilled to below 96% alcohol so it keeps the character of rum, and bottled at 37.5% or more. It cannot be flavoured, and colour may only be adjusted with caramel.

"White", "silver", "blanc" and "light" are not legal categories. They describe colour, and there are two quite different routes to a clear rum:

  • Unaged: the spirit comes off the still and rests in stainless steel or another neutral vessel before being reduced with water and bottled. Nothing is taken out, so the raw character of the cane and fermentation stays in the glass.
  • Aged and filtered: the rum spends time in oak, which softens it and adds colour, and is then filtered through charcoal to remove that colour. El Dorado 3 Year Old and Doorly's 3 Year Old are both made this way.

Is white rum aged?

Sometimes. Plenty of excellent white rums never touch wood, and others carry an age statement. Under the AOC Martinique rules, a rhum agricole blanc rests after distillation without contact with wood. So "white" tells you about colour, not about age. Read the label: an age statement tells you the rum has spent time in wood. Filtration alone tells you less, because unaged rums are often filtered too.

How white rum is made: what shapes the flavour

Three choices matter more than anything else.

Molasses or fresh cane juice

By far the majority of rum, white or dark, is made from molasses, the thick syrup left over from sugar making. It gives the familiar rounded, slightly caramel-like rum flavour. Fresh pressed cane juice gives something greener and more vivid: think cut grass, citrus and pepper. Under EU rules, the term "agricultural" (rhum agricole) is reserved for cane juice rum from the French overseas departments and Madeira. Rum made from cane juice elsewhere, such as the Compagnie des Indes white rums from the Dominican Republic, can share that fresh profile without carrying the name. Pot or column still

Column stills, especially multi-column set-ups, make lighter, cleaner rum. Pot stills give heavier, fuller spirit with more of the fermentation flavours left in. Some producers blend pot and column spirit to get the best of both.

Distillation strength and fermentation

Distilling to a lower strength keeps more flavour compounds in the spirit. Under EU rules, a rum with a registered geographical indication can only add the term "traditional" if it is distilled below 90% and holds a minimum level of these compounds, and AOC Martinique rhum is distilled to between 65% and 75%. During fermentation, yeast also creates esters, the aromatic compounds behind the intense fruity "funk" of high-ester rum. Some Jamaican distillers build them up with dunder: the lees from earlier distillations, left to develop in open pits and added back to the ferment.

Types of white rum

On the shelf, white rums sort into four broad styles.

Light molasses white rum

Clean, soft and mild. This is the style most people know, often column distilled and sometimes aged and filtered for extra smoothness. It mixes easily and stays in the background.

Cane juice white rum and rhum agricole blanc

Grassy, peppery, floral and often bottled at 50% or more in the French Caribbean. It makes a sharper, more aromatic Daiquiri and is the base of the Ti' Punch.

High-ester and Jamaican-style white rum

Pot still heavy, with big tropical fruit aromas that bartenders call hogo or funk. A small measure changes a whole drink, which is why it turns up in tiki recipes.

Overproof white rum

Anything bottled well above the usual 40%. The extra strength carries more flavour through ice, juice and sugar. Pour it with care and use smaller measures.

White rum alcohol percentage: what the strength means

In Australia, Standard 2.7.5 of the Food Standards Code requires anything sold as a spirit to contain at least 37% alcohol by volume (tequila is the one exception, at 35%). Most everyday white rum sits at 37.5% to 40%. Craft and agricole bottlings commonly run from 45% to 59%, and a few go higher still.

Strength is mostly about flavour. A rum bottled at 50% simply has less water in it than the same rum at 40%, so more aroma reaches the glass and it holds up better against dilution in a shaken drink. That is why a 45% to 50% rum can make a livelier Daiquiri. The trade off is obvious: at higher strength, the same pour contains more alcohol, so measure every drink and adjust the pour rather than free pouring.

White rum vs dark rum

Dark rum gets its colour from time in oak, from added caramel, or both, and usually tastes of toffee, spice and dried fruit. White rum is either unaged or filtered after ageing, so it keeps a fresher, lighter profile that lets lime, mint and soda show. Colour is not a reliable guide to quality or age in either direction. How to drink white rum: three serves

The case for a better white rum is simple: in these drinks the rum is the main ingredient. In a Daiquiri there is nothing else but lime and sugar, so a characterful rum gives you a characterful drink. In rum and cola the difference is smaller, and a mild rum does the job.

Daiquiri

The International Bartenders Association recipe, which specifies white Cuban rum (any good white rum works):

  • 60ml white rum
  • 20ml fresh lime juice
  • 2 bar spoons superfine (caster) sugar

Stir the ingredients in a shaker to dissolve the sugar, add ice, shake and strain into a chilled cocktail glass. Best rums: a flavourful 40% to 50% rum. El Dorado 3 Year Old gives a smooth, classic result; Doorly's 3 Year Old adds more body; an agricole such as Saint James Blanc makes it grassy and bright.

Mojito

The IBA recipe, again written for white Cuban rum:

  • 45ml white rum
  • 20ml fresh lime juice
  • 6 mint sprigs
  • 2 teaspoons white cane sugar
  • soda water to top

Gently mix the mint with the sugar and lime juice, add a splash of soda and fill the glass with ice, then pour in the rum, top with soda and give it a light stir. A clean, fresh rum suits it best, such as Compagnie des Indes Great White.

White rum highball

Pour 45ml of white rum over plenty of ice in a tall glass, top with about 120ml of chilled soda water and add a squeeze of lime. This is where you really taste the rum, so it is a good way to compare bottles side by side. For the French Caribbean way with agricole, try a Ti' Punch: stir a teaspoon of cane sugar into 50ml of rhum, then squeeze in a small piece of lime peel, with or without ice.

  • El Dorado Rum 3yo: from Guyana's Diamond Distillery, aged at least three years in oak and charcoal filtered; the easiest upgrade for anyone who likes a soft, clean Daiquiri.
  • Doorly's 3yrs White Rum 47%: from Foursquare in Barbados, aged at least three years in ex-bourbon casks and then charcoal filtered; for drinkers who want more body and a little extra strength.
  • Compagnie des Indes Great White: a clean cane juice white rum from the Dominican Republic at 40%; an approachable starting point for Mojitos and rum and soda.

Big flavour and overproof

  • Compagnie des Indes Compass 51.2%: a Dominican cane juice white rum built for mixing; it keeps its flavour in a Daiquiri or punch where a 40% rum can get lost.
  • Killik Silver OP 59%: a high-ester white from Killik, a small Victorian producer based in Belgrave, with stone fruit, pear and bubblegum aromas; for tiki fans and anyone curious about hogo.
  • Labat White Navy Strength 59%: cane juice rhum from Marie-Galante, made by the distillery for Ti' Punch; for experienced agricole drinkers.
  • Saint James Brut de Colonne Bio 74.2%: organic rhum bottled at full column strength; a specialist bottle for measured, careful use in cocktails.

White rum FAQ

What are the best white rum brands to start with?

For a smooth, familiar style, El Dorado 3 Year Old or Doorly's 3 Year Old. For a fresher cane juice style, Saint James Blanc or Compagnie des Indes Great White. Both camps make a better Daiquiri than a generic light rum.

What alcohol percentage is white rum?

At least 37% in Australia, and 37.5% under EU rules. Most sits at 37.5% to 40%, while agricole and overproof bottlings range from about 45% to over 70%.

Is white rum the same as "white alcohol"?

"White alcohol" or "white spirits" is an informal term for clear spirits such as vodka, gin, white rum and blanco tequila. White rum is one of them, but unlike vodka it keeps the flavour of its raw material, sugar cane.

Can I swap white rum for dark rum in a recipe?

You can, but the drink will change. Dark rum brings caramel and spice and colours the drink, which works in a punch and less well in a Mojito.

Is rhum agricole a white rum?

Rhum agricole describes how it is made (from fresh cane juice), not its colour. It comes in white (blanc) and aged (vieux) versions.
