Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, was Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

Its complexity gives lends character and sparks an interest in the 10-year, 15-year and older vintages. NOSE This rum has a rich nose of fruity notes: candied fruit (candied orange zest), dried fruit (fig, date and prune), quince conserve and the delicious enticing notes of gingerbread (honey, nutmeg, cinnamon and vanilla). It is irresistibly elegant. PALATE A complex palate with the candied fruit and dried fruit reminiscent of the nose, enhanced with a deliciously sweet note of Tonka bean. JM Rhum Agricole Fumée Volcanique 49% 700ml JM Fumée volcanique is an agricultural rum from the “l'Atelier des Rhums” series, dedicated to mixology and cocktails . This initiative from the JM house aims to develop advanced aromatic profiles, by working on the barrels. It is Karine Lassalle, cellar master of JM, and Joseph Akhavan (founder of the bar le Mabel in Paris) who are at the origin. The name of this rum refers to the location of the distillery, at the foot of Mount Pelée in Martinique. To add flavour to this tribute, we chose very toasted bourbon casks. The heating applied to American oak is called "alligator". The wood thus burnt forms beautiful black scales. After 12 to 14 months of aging, the rum, tfore, develops smoky notes. They blend harmoniously with the vegetal and fruity notes of agricultural rum.

This distillery, built on the side of a volcano in Martinique, produces one of the highest quality of Rhum Agricole around, with this bottling being no exception. This fabulous spirit has been finished in Calvados casks, the second in this series of bottlings. The result of this finishing process is a rum of extraordinary complexity. Calvados is a type of French apple brandy, highly valued for its clarity of flavour, with the cask being sourced from the famous Lecompte brand. the cask lends notes of bright fruits and tartness to the sweet, vanilla-rich and fragrant Agricole, produced from the fermented juice of the sugar cane. The spirit has been aged for 10 years, which is quite a while in the heat of the Caribbean, and produces a rum of surprising complexity. This rum has been bottled at 41.1% ABV. This is a single cask rum, with only 937 bottles available worldwide, meaning that drinkers should move fast if they want to try this tipple.
